In addition to recycling all of our paper, aluminum and glass, MonkeyMan and I also re-use. You have seen or heard about those crazy old ladies who rinse out and re-use baggies ? Yup we do that. I have been known to wash off tin foil and re-use it four or five times before its ready to toss. About 95% of our home furnishings are used…mostly family hand-me-downs. I adore walking through my home and knowing where everything came from and being able to assess beautiful timeless memory with each piece.

My wardrobe is no exception, and other than underwear, lingerie, socks and my swimsuit? I cannot tell you the last time I bought any article of clothing that was new. Oh wait- I DO own a couple of pairs of new shoes…flip-flops. Two for five dollars.

Soooooooo last night I was at one of my favorite rummage sales, Annie’s Attic, where I get most of my vintage clothes. By the time I got home, MonkeyMan was into another project and I was STARVING. So, I had to whip up a quick dinner using just things that we had.

Not unlike my ratatouille quiche, it turned out much too good not to share, so here goes:

 

2 cups vegetable rotini pasta (if you can stomach whole wheat pasta, go forth and gravitas)

 1/2 medium sized zucchini, chopped

1 small onion, minced

1 clove garlic, minced

2 fresh basil leaves jullian

1 tsp dried oregano

1/2 large tomato chopped

EV olive oil and butter

salt

1/2 jalapeno minced

I just combined everything into a hot skillet, save the pasta, and sautteed. Cooked the pasta, drained, and tossed w/ the veggies and crumbled feta. The whole thing took about 15-20 minutes tops and was the catttttttttttt’s meowwwwwwwwww. Give it a try.

My point? (I always have one) Next time dinner needs to be quick, assess your veggies and just — cook em and toss with pasta. Be creative. Not everything has to be bought, frozen, or come out of a box.
